My chubby vegan sausages

Here goes a recipe I did mixing tofu and ingredients needed to make seitan ... they were nice! But I need to practice my rolling skills ... made them a biiiiit too chubby.

Ingredients:
  • 250g of tofu
  • 2 cups of gluten
  • 1 tsp of nutritional yeast
  • 1/2 tsp of sweet pepper powder
  • 1 tsp of white pepper
  • 1 Tsp of smoke liquid
  • 1 tsp of salt
  • 1 tsp of nutmeg
  • 2 tsp of garlic powder 
  • 1 1/2 cups of warm water
  • 1 1/2 Tsp of flour
  • 3 Tsp of oil

How to make my chubbies
  • Mash tofu until you form a paste
  • Mix all dry ingredients
  • Mix the liquid smoke with the warm water
  • Bring water to boil in a large pot
  • Mix all ingredients (...add oil!) together until you get a proper paste. I did all by hand ... using a fork but if you have any equipment that can help you out... USE IT hehe
  • I used tin foil ... because that's what I had and formed chubby sausages by pouring some of the mix and rolling it inside. Close them and put them into the hot warm to cook for 20-30 min at medium heat.
  • Whenever you want to eat them, best to fry them or cook them in the oven.

Tofu cheese

Ingredients
  • 1 block of tofu
  • 1 spoon (first cheese) or 1 cup of soya or other non dairy cream
  • 1 tsp of onion powder
  • 1 tsp of garlic powder
  • 1 tsp of salt
  • 4 tsp of agar agar

 Using a whole cup of soy cream makes it so much creamier and has a better taste, although it wasn't hard enough ... the first cheese on the other hand, I was capable to shred it and use it with chilli beans and other dishes. The only issue is that it doesn't melt like proper cheese :s 

How to make cheese
  1. Mix ingredients and blend
  2. Pour mix into a pot and heat for 5 minutes
  3. Pour into mold and let cool at atmospheric temperature
  4. Place in fridge for further hardening

Chocolate pudding

Ingredients:

  • 1 block of silken tofu or soft 
  • 2 spoons of cocoa/cacao powder
  • 3 spoons of agave syrop
  • 1 spoon of coconut milk
  • Pinch of salt
How to make chocolate pudding:
  1. Get rid of the tofu water
  2. Mix all ingredients with blender
  3. Serve with fruits, chia, nuts or as you wish
  4. I added some banana and peanut butter to the leftovers and ate it at another time 
  5. YUMMY

Morels with quinoa

From one of my moms recipes I made this delicious meal. Where she's from during fall you can find loads of edible fungi and mushrooms (also poisonous ones tho), the best ones for me are morels which you can dry out and cook whenever you want. She made for me a little box full of dry ones ... some of them which I used for this recipe. 

Ingredients
  • 8 dry morels
  • 1 onion
  • Non dairy (for vegans) or dairy cream
  • White wine
  • 1 cup of quinoa
  • 1 bag of fresh spinach
  • Veg broth 
  • Salt 
  • Olive oil
How to cook this meal
  1. The night before soak the morels in water. Just enough to cover them, not submerging them
  2. When you are going to eat, start by making the quinoa side. 
  3. Put some water to boil and bring the spinach when it's boiling. 
  4. Cook them for 5 minutes
  5. Strain spinach and add some more water to cook the quinoa
  6. It takes 10-15 minutes to cook the quinoa so about 5 minutes before they are done start making the morels
  7. Heat some olive oil on a pan. 
  8. Peal and chop the onion and add to the pan
  9. When it starts getting gold, add morels. If they are too big cut them in halves, although it's better to just pour them without doing so ... makes it more yummy when you bite them
  10. Add spinach and veg broth to the quinoa and stir
  11. Add white wine to the pan and lower the heat
  12. After a couple minutes, add cream to the pan and wait until the sauce does the 'chup chup' i.e. you get bubbles and stuff, but it doesn't get dry
  13. Add salt to the pan and stir
  14. In a plate place the quinoa and make a hole in the middle to pour the morels 
  15. ENJOY!


It's soooooo gooood!!!

Homemade tofu


Tofu can be done in several ways … I’ve tried making it with nigari and lemon juice (real lemon … not liquid) and it’s about the same. Anyways I’m just going to post how to make it using nigari … which is a kind of salt full of magnesium … actually some people have it to add some into their diet.

Ingredients
  • 2 L of soy milk
  • 1 Tsp of nigari
  • 1 cup of water


How to make tofu using nigari
  1. Pour the soy milk into a big pot and heat
  2. Meanwhile warm some water on the kettle or in the microwave for 1 minute
  3. Pour the nigari into the glass and mix well
  4. When the milk is hot with some tiny bubbles on the side, but not boiling, add the nigari.
  5. Cover and let it work for 30 minutes
  6. Place a cotton cloth inside a colander
  7. After the nigari effect, pour the tofu through the cotton – colander getting rid of the liquid….
  8. Put some weight on top so that most of the liquid gets out and your tofu becomes firmer
  9. Place in a tupper filled with water and store or use 

I know it's not the prettiest tofu you've seen but it's exactly the same! And same price. Also I didn't have the proper box to make the tofu so I used what I had home :)

Pesto sauce!

Pesto sauce is so simple to make ... With just 4 ingredients you can make an amazing sauce for salads, pasta, sandwiches, etc ... I've even read some people that make it out of rocket, spinach or even broccoli. There's also color variations made out of pepper amongst others.


Ingredients
  • ½ cup of pine nuts
  • ½ cup of basil leaves
  • 3 spoons of olive oil
  • Salt
  • Optional: Parmesan grated cheese


How to make pessssto
  1. Simply blend everything
  2. To keep it in the fridge add a lot of oil on the glass jar for it not to go bad

Taboulé

I couldn't bother to go shopping and really wanted to go to the gym... thus, when I came back and after having an awesome shower, I simply decided to make a meal made out of what I had in the fridge and canned. 

Ingredients

  • 1 cup of wheat grains
  • 1 can of red pepper
  • 1 Tsp of sweet corn
  • 1 onion
  • 1/2 broccoli 
  • 1 sweet potato
  • Olive oil
  • Salt 
  • Basil leaves
  • Mix herbs
  • Garlic powder
How to make this taboulé
  1. Bring some water to boil in a pot 
  2. Peel and chop onion and sweet potato
  3. When water boils add wheat and sweet potato
  4. After 5 minutes add onion and broccoli
  5. Cook until sweet potato is soft and wheat is cooked 
  6. Pour into colander and safe liquid as it could be consumed as a soup
  7. In a plate pour everything with some olive oil, salt, herbs and garlic powder 
  8. Mix and add the corn and red pepper sliced
  9. Decorate with some basil leaves

Vegan baked feta

Ingredients
  • 1 ½ cups of almonds
  • 1 lemon juice
  • ½ cup of water
  • 3 Tsp of olive oil
  • 1 tsp of onion powder
  • 1 tsp of salt


How to make feta
  1. Soak almonds for a few hours in water before the mix
  2. Wash the almonds and blend together with the rest of the ingredients
  3. Place in cheesecloth or cotton cloth for 12h with a colander and a plate under. Better to leave this inside the fridge
  4. After those 12h, grease the mold that you’ll use for the ‘baking’ and get the cheese out of the cloth
  5. Switch on the oven at 180ºC and after a couple minutes place the cheese inside the mold into the oven to be baked
  6. Leave for 30-40 minutes … until the upper part gets gold or cracks
  7. Take out and let it cool
  8. The outside would be hard, but the inner soft
