chia melon cucumber soup

Ingredients: 

  • 1 yogurt
  • 1 cucumber
  • 250g pieces of melon
  • 1 Tsp of extra virgin olive oil
  • 1 tsp of vinegar
  • 1 Tsp of chia seeds
  • Mint leaves
  • Salt & pepper
  • 1 cup of water
How to make this cold soup - PERFECT FOR SUMMER! 
  1. Blend together all ingredients
  2. Leave it for a few hours in the fridge
  3. ENJOY very cold :)

Acai bowl

Ingredients for mix:

  • ½ yogurt
  • ⅓ avocado
  • 1 frozen banana slices (use some to decorate ...)
  • 5 strawberries
  • 20ml of acai juice
  • Frozen wildberries mix (blackberries, blueberries, etc)
  • 1 Tsp of chia 
  • 1 cup of fresh spinach

To decorate:

  • Homemade granola
  • Frozen banana slices 

Blend them all and decorate! Enjoy!!

Soba noodles with mock duck


Ingredients: 

  • Soba noodles (100g +/-)
  • 1/2 cup of edamame 'peas' 
  • 1 broccoli 
  • 1 can of mock duck
  • 2 Tsp of hoisin sauce
  • 3 Tsp of cream sauce (or also coconut milk works) 
  • 1 Tsp of black sesame 
  • 1 Tsp of peanuts
  • Salt
  • Olive oil 
  • 5 mushrooms
  • 1 small onion
How to make these noodles
  1. Start by boiling some water
  2. Wash mushrooms 
  3. Peal and chop onion and mushrooms
  4. Boil broccoli and soba noodles for 5 minutes (approx) 
  5. Fry onion in a wok
  6. Add mushrooms and mock duck...  and then edamame (I buy frozen ones) 
  7. Drain broccoli and soba noodles ... add them to the wok 
  8. Add hoisin sauce, cream and salt to wok
  9. Mix ingredients and let them mix flavours for 2 minutes
  10. Get them out and serve with some peanuts and black sesame seeds

Green super smoothies

Make your own! 

How?
  • Choose a green leaf ... lettuce, spinach, kale, etc and take a handful and pour in mixing bowl
  • Pick 2 fruits (at least) ... bananas are the fruit which in my belief combine the best with any other fruits or even veg such as:
- banana, lime and cucumber
- goji, banana and pineapple
- banana, blueberries and blackberries
- banana and strawberries
- kiwi and banana
- nectarine and banana 
  • Liquid ... water, lemon/lime/orange/other fruits juice, coconut water, soy milk, yogurt 
  • Improve your smoothie by adding some Superfoods! e.g. chia, spirulina (all of these have both), maca, gojis, etc

    Vegan nuggets!

    I found this recipe on Dimensión vegana, a site which I've already mentioned before where you can find tons of vegan or raw recipes easy to make ... these guys even make videos and provide you with options to improve your recipes or to substitute some of the ingredients.



    Anyways ... I've just made them and thought I had to post this straight away ... because it's amazing how good this nuggets are.


    Ingredients: 

    • 200g of dried Yuba (tofu skin) 
    • 1 Tsp of corn starch 
    • 1 tsp of onion powder
    • 1 tsp of garlic powder
    • 1/2 tsp of salt
    • 1 bread slice previously dipped in soy or another non dairy milk ... or just water to soften
    • If you need add breadcrumbs... I didn't
    • Optional: vegan cheese (second one) or buy it hihi
    For the breading ... 

    ... First bowl:
    • 2 cups of flour 
    • 1 tsp of onion powder
    • 1 tsp of garlic powder
    • 1 tsp of chicken seasoning powder
    • 1 tsp of kala namak salt (black salt) 
    ... Second bowl:
    • 1 cup of soy milk 
    • 1 tsp of white wine
    ... Third bowl:
    • 1 cup of panko bread crumbs 


    How to make these awesome nuggets
    1. Soak over night yuba sheets or boil them for at least 2h (what I did) 
    2. Meanwhile prepare the mixtures
    3. Drain the yuba and wait until it cools down to press it to get rid of further water
    4. Chop yuba in tiny pieces and add the milky bread, onion powder, garlic powder, salt and corn starch
    5. Form nuggets by chopping sort of squares with the vegan cheese and covering them with the yuba mixture 
    6. Place the nugget into the flour mixture, then into the milky one and then into the panko
    7. Form nuggets and heat some sunflower oil for frying
    8. Place the nuggets and when the sides get brownie turn around
    9. When done place them in a plate with kitchen paper to get rid of some of the oil
    10. Enjoy by themselves or with some ketchup or other sauces you like :D 
     

    Vegan healthy mousse

    There's loads of different ways you can make chocolate vegan mousses or puddings. I make mines two ways ... either mixing: 
    • 1/2 avocado
    • 1 Tsp of agave syrup 
    • 1 Tsp of coconut milk 
    • 1 banana
    • 1 Tsp of cacao powder
    • 1 square of chocolate
    • Pinch of salt

    Or with tofu instead of avocado ... about 200g of drained tofu. 



    Add nuts, dry fruit or even soft cream on your mousse and enjoy anytime!!!!!!

    Soba noodles with peanut sauce


    Ingredients:
    • Soba noodles
    • 1/2 onion 
    • 1 Tsp of edamame
    • 1 Tsp of peanut sauce
    • 1 Tsp of soy sauce
    • 1 carrot 
    • Some broccoli
    • 1 lime
    • Salt
    • Peanuts crushed 
    • Fresh cilantro 



    Start by bring some water to boil for the noodles and broccoli. 


    Peal and chop onion and carrot. Place some oil on a wok and fry onion. Then add the edamame and carrot.


    When water starts to boil add the noodles and broccoli and cook for 5 minutes. Add noodles and broccoli drained, together with the peanut, soy sauce, salt and some lime juice. 


    Serve with cilantro and lime


    ENJOY!

    Strawberry jam


    As I mentioned before ... I bough about 2kg of strawberries and don't know how to finish them! The easiest way to use them was to make a jam ... easy and something that can be used with toasts, biscuits, yogurts, etc ... although I love to spoon some peanut butter and jam ... and have them together hihi

    Ingredients: 

    • 1/2 kg of strawberries
    • 2 Tsp of agar agar (powder) 
    • 1 Tsp of brown sugar (you should use more if you want it very sweet ... or if your strawberries aren't that sweet) 

    How to make strawberry jam
    1. Wash and drain strawberries.
    2. Put them in a large pot and heat with medium heat. Leave them for about 15-20 minutes. Covered.
    3. When they are soft add the sugar and mix.
    4. When sugar has melted, add the agar agar and whisk for 2 minutes. 
    5. Pout in a pot and leave until it cools. 
    6. Store it in the freezer. I have no idea how long it lasts for... but it's been a week and it's still good. 

    Vegan stroganoff


    Ingredients: 
    • 1/2 onion
    • Spinach tagliatelle 
    • 2 Tsp of rice cream
    • Spinach 
    • 50g of tofu 
    • Frozen mushrooms
    • 1 tsp of dijon mustard
    • 1 tsp of white wine
    • Vegan butter
    • Salt 
    • Panko 
    • Black pepper

    How to make stroganoff
    1. Start by boiling some water on a pot for the pasta
    2. Peal and chop onion
    3. Drain tofu and chop
    4. Put butter on the pan and fry the onion
    5. Add tofu
    6. When tofu is brownish add spinach and then mushrooms
    7. Add white wine
    8. Lower heat and let the alcohol evaporate
    9. Add he cream, salt and black pepper
    10. Drain pasta and add to the mix
    11. Serve with some rocket leaves and some panko bread crumbs 

     







    Spinach strawberries salad


    Summer is coming!! 

    Spain's weather is getting better and with that comes the time to start eating cold meals and loads of salads! I looked at different recipes and found this cool one with strawberries which was great because I bought about 2kg of strawberries the other day ... had to make a jam too because of that. 

    This recipe is perfect for a hot day when you have noooooo time to start cooking ... or when you are back from work. 

    You need spinach leaves, strawberries, poppy seeds (and any other seeds you like), balsamic vinegar, salt and olive oil (extra virgin) ... and that's it!

    Vegan cheeses

    More vegan cheeses! 

    First one ... is a coconut cheese made out of agar agar, coconut vinegar, coconut milk, tapioca flour and salt. I found the recipe on Olives for dinner's blog ... to be honest I didn't enjoy it too much .. I should've made again the one with coconut milk and tofu which is nicer than with coconut vinegar. 

    Second one... Is a sort of gouda I found on Dimensionvegana ... I swear every recipe I make from these guys is awesome ... easy and great taste... It's not the same as eating normal cheese but serves to make a sandwich or even on a salad ... It's made out of soy milk, tapioca flour, carrageenan, 1 soy yogurt, salt and olive oil (I used half of what they are using... thought 6 Tsp of olive oil was way too much) 

    Third one ... Vegan mozzarella balls from Miyoko's dairy free cheeses (the Artisan Vegan Life) ... Made out of soy yogurt, tapioca flour, carrageenan, xantham gum, nutritional yeast, salt, vegetable oil and ... I think that's about it ... It's alright ... really nice for cooking but I can't seem to make it harder! Maybe it's the gum ... but gives it a stretchy consistency :) 



    I will post some recipes with these cheeses :D

    Sharp vegan cashew cheese


    This is actually a recipe from Vedgedout which I found this recipe on Pinterest. Simple vegan cheese which you can eat with toasts, 'crudités' or sandwiches. Perfect for dinner ... although don't eat the whole ball at once!!

    Ingredients:
    • 1 cup of raw cashews (not the salty ones)
    • About 6 pieces of dry tomatoes
    • 2 Tsp of nutritional yeast
    • 1 Tsp of miso soup
    • 1 tsp of onion powder
    • 1 tsp of apple sider
    • 1 tsp of sea salt
    • 1 tsp of mustard
    • 1/4 tsp of turmeric
    • 1/2 of paprika ... cayenne pepper
    • 1/3 cup of coconut oil



    How to make this cheese:
    1. Start by soaking the cashews and tomatoes overnight
    2. Next day drain and blend
    3. Place coconut oil in the microwave for 30 secs ... or until its liquid
    4. Blend the rest of the ingredients with the cashews and tomatoes. 
    5. Place in a bowl and let it cool
    6. After at least 4h you can take it out and spoon it out getting a roundy shape. You can cover it with almond flakes or if you prefer seeds, other nuts or by itself. 
    7. Enjoy and thank you Vedgedout! 



    Chocolate cardamom tapioca pudding


    Ingredients:
    • 1/2 cup of tapioca pearls
    • 2  tsp of brown sugar
    • 2 Tsp of cocoa powder (not sweeten) 
    • 1 cup of almond milk
    • 1 cardamom 
    • Optional: nuts, agave syrup, further cocoa on top or cinnamon 

    How to make this pudding
    1. Pour the pearls in a cup and add water covering the rest of the cup.
    2. Leave it for an hour and drain. 
    3. Place milk on a pot and when it gets hot add the cardamon, sugar and cocoa. 
    4. Mix and add the tapioca pearls. Cook until they lose the white colour they used to have
    5. Get them out and refrigerate ... or eat them hot as you wish!

    Tofu mushroom leek frittata


    Ingredients: 

    • 1/2 block of soft tofu
    • 1/2 block of hard tofu
    • 1 leek 
    • 1 garlic clove
    • 1 green onion
    • 5 shiitakes 
    • 5 normal mushrooms
    • Olive oil
    • Salt
    • Thyme 
    • Bay leave
    • 1 tsp of white wine 

    How to make: 
    1. Peal and wash veg 
    2. Chop all veg
    3. Drain tofu with towels and mash 
    4. Fry green onion, garlic and leek 
    5. Add tofu and cook for 2 minutes and mix with salt and thyme
    6. Set aside and cook mushrooms 
    7. Add white wine and bay leaf and cook for a couple
    8. Add mushrooms to tofu mixture. Remember to take bay leaf! 
    9. Clean pan and add some olive oil to make the frittata 
    10. Cook on one side for 5 minutes over medium high heat
    11. Turn and again cook for 5 minutes
    12. If needed turned again and carry on frying the frittata. 
    13. Get it out and let it cool for a bit before cutting ... or you'll destroy it like I did






    Vegan hard cheese

    Recipe from Dimension Vegana, cheers guys! I love it! 

    Ingredients: 
    • 3 Tsp of rice flour
    • 3 Tsp of tapioca
    • 4 Tsp of potato starch
    • 1 soy yogurt (home made)
    • 2 Tsp of water
    • 3 Tsp of cashews (soaked on water overnight) 
    • 4 Tsp of carrageenan 
    • 1 Tsp of miso (brown) 
    • 1/4 tsp of white pepper
    • 1/4 tsp of turmeric powder
    • 1 tsp of garlic powder
    • 1 tsp of onion powder
    • Pinch of salt
    • 1/2 cup of Melted coconut oil 
    • 1 tsp of smoke 
    • 1 tsp of white vinegar 
    • AND I forgot nutritional yeast ... but you should add it to boost the cheese flavour


    How to make hard cheese
    1. Soak cashews
    2. Drain them and blend with everything
    3. Switch oven on and place the mixture into greased molds 
    4. Cook in over over 180ºC for 30 minutes 
    5. Get it out, let it cool and cover with kitchen paper to absorb liquid ... make it harder
    6. Leave it in fridge for a couple days and enjoy! 
    7. You can also air dry with a metal

    Quinoa bean burger





    Ingredients:
    • 1 can of black beans
    • 1 cup of cooked quinoa
    • 1/3 cup of bread crumbs
    • 1/2 red and green peppers
    • 1/2 onion
    • 1 garlic clove
    • Mexican spices mix
    • Salt 
    • Olive oil

    How to make burger
    1. Start by pealing the onion and garlic. Then chop them
    2. Drain black beans and place in the blender together with the quinoa, bread crumbs and spices
    3. Clean peppers and chop
    4. Fry peppers, onion and garlic
    5. Place these in blender and mix everything together
    6. You should have enough to make 4 burgers ... now fry them over medium high heat each and enjoy

    SUPERFOOD SMOOTHIE


     Lately I've been taking superfood smoothies every day ... to be honest it's quite early to tell but I feel less tired during the day ... maybe it's a mental thing lol but I actually do and I am loving this smoothies.

    This one I made it with 1 bunch of spinach, a tsp of spirulina, 1 tsp of maca, 2 tsp of chia, 1 cup of mango juice, 1 banana, 2 tsp of goji berries and 4 strawberries. Topped with almonds.


    In case you are wondering how I was about the 'correct' mixtures to make to have a super nutritious smoothie ...
